4 days to go

So here's an update on the diet this week. We have done pretty well actually. Did you know that soy and corn are in EVERYTHING!!!!! Seriously folks, things that you think are one ingredient, there is corn or soy in them. It's rather annoying to sort out. So there have been some mistakes but for the most part, we are sticking really close to the diet.

Lucy is only going gluten free this week. She is eating less soy and corn only because we took most things out of the house. The first few days, I tried to just eat mostly veggies, fruits, beans, meat without any special alternatives. By day 4 or 5 Lucy and I were having a hard time without some bread like substances. So I bought a loaf of gluten, dairy, soy, free bread for $4 a mini loaf, some gluten free tortilla shells made with rice and tapioca flour and we baked some gluten, dairy, egg, soy and corn free cupcakes. I have to say that the bread made me VERY happy and then I noticed they had eggs in them. Darn it!!! I also had a nasty reaction to the cupcakes. I'm not sure what about them caused me trouble. Could have just been the sugar since I hadn't had any processed sugar for several days. I don't know but I need to look into that.

I think our biggest accomplishment was going to the Western Washington fair with Grandma and not cheating!! I brought a cooler with plenty of food so we didn't get hungry and be too tempted. We sat down at the red checked table cloth at the BBQ booth and popped it open and watched everyone around us eating giant cobs of roasted corn, corn dogs, funnel cakes, elephant ears and ice cream cones. I was really nervous for myself but also for Lucy. Eating like this is my agenda. But she didn't see anything weird about it. As far as she was concerned, we were popping out the cooler that we always bring out for a meal when we are out. She was excited because I promised her some cotton candy which she had never tasted before. After touring the barns, catching a circus, devouring the cotton candy and riding a few rides, we left the fair feeling great. The kids did great even though it took 2 hours to get there and almost 2 hours to get home. I have to believe that food played a role in that success.

Anyway...we're doing well as long as I have things really planned out. I am thinking about food ALL DAY. I can see that when we figure out if there are any allergies or intolerances, we'll have to do some work to make big changes in how we eat. But for now, we're making the week work.

The best part is that by day 2, Edie was sleeping through the night. First time ever! She slept that way for 3 days and then the last two days, something else hit her. Last night she was up from 2-5am again. There was some hope there. I have to write down everything she had yesterday and try to figure it out.

Aaahhh...the mystery medical tour continues.

I'm so impressed! Hope you're still doing well and kudos to Lucy for being such a trooper :-)
